One of the best parts of October!

It is almost time for Mcdonald's Monopoly to start! I am so super excited! I am just like a little kid I love the food at Micky D's! It is always my favorite when October comes around and you can start earning your little game pieces! It makes eating even more fun, which I love! (I blame my obsession with this game on being the youngest child by nine years and not ever having anyone to play games with) When I was in High School and it was Monopoly season, I made my friends go to Micky's every day for our lunch hour. A few of them got really into it with me and we would have competitions to see who could "win the most" (but, we were always good about sharing our duplicate pieces with one another). I have never won, or known anyone who as actually won more than a free hash-brown, but I keep telling myself that some day I will! Maybe Ronald Mcdonald will help Josh and I pay for college! (:

LET THE GAMES BEGIN!

Homemade Oreos

I love baking! These are the homemade oreo's that I made for our friend Jarron's birthday yesterday. He is a BIG BYU football fan! I used food coloring to make half the filling cougar blue!

And just in case anyone is wanting the recipe...

For the Cookies

1 1/4 cups all-purpose flour

1/2 cup unsweetened Dutch process cocoa

1 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup sugar

1/2 cup plus 2 tablespoons butter

1 large egg

1. Set two racks in the middle of the oven. Preheat to 375°F

2. Mix the flour, cocoa, baking soda and powder, salt, and sugar.

3. Add the butter, and then the egg. Continue mixing until dough comes together in a mass.

4. Take rounded tablespoons of batter and place on baking sheet. Bake 5 min then remove baking sheet, flatten batter and bake for another 4 min.

For the Cream Cheese Filling

1 stick of butter
1 package of cream cheese
3 to 4 cups powdered sugar
1 teaspoon vanilla
food coloring (optional)

1. soften butter and cream cheese separately.
2. mix butter, cream cheese and vanilla until stiff peaks appear
3. slowly add powdered sugar 1/2 cup at a time

Scoop filling on one cookie and add the top cookie... cool and eat!

Yum!

Update!

We got into Boise State! Now we just have to make it into the program! I know my baby can do this! Yay Josh!

The biggest fair in the nation

We went to the Texas State Fair on Saturday with our friends Karisa and Jarron Udy.

We saw "Big Tex"

And the amazing BMX guys.

We went to the pig races.

We ate fried pizza, fried peanut butter cups and fried snickers.

Fair's are a lot like sporting events.... the best part is the food!

I love making new memories with my husband.

The boys are two of a kind.

They are both big jokesters! They kept Karisa and I laughing all night!

Josh thought it was pretty cool to see the Heisman!

Josh and I both love Jeep's, it was fun to hop in the drivers seat of a couple and imagine "some day"

Movie night in the park

So everyone knows I am obsessed with Gilmore Girls. And ever since I saw the episode where they watch a movie in a park, I have wanted to do just that! Well Friday night we did just that. Rockwall City Parks Department put on Family Fun Night every Friday night in September. The movie we saw was interesting to say the least, it had talking lab puppies who escaped to Alaska and joined a dog sled team.
Thank you Joshie for having such a positive attitude and for watching a lame movie with me. I had a really fun night with you. I am so blessed to be married to my best friend.

Cowboy Boots and the Rodeo

Josh and I have been trying for months now to go on double dates with each of the couples on the Jones side of the family. Our first "DD" was a few months ago when Karim and Chris were in town, we went out for Tex-Mex, watched a movie and they spent the night at our house. Then last week we went to the Rangers game with Jerri and Bruce. So now Ashley and Collins! We went to the Mesquite Rodeo!!!!! It was alot of fun hanging out with the Joneses.

I have been wanting some cute cowboy boots for a while now. My sweet husband Josh got me a pair right before rodeo on Saturday. Of course I was so excited! I even wore them to church on Sunday.

Yee-Haw!

We look forward to a double date with Linds and Dane.

Just us...

Hot Air Balloon Festival

We have had a fantastic weekend and it's only 4pm on Saturday! Last night Josh and I went to a community theater production of Alice in Wonderland with our good friend Emily and her cute litte date (her little boy) Owen! The play was very entertaining, it made me miss my days of children's theater and just acting on stage in general. Thanks Em for a wonderful night!
After the play we went over to Bruce and Jerri's (Josher's parents) house to spend the night.

Why are we spending the night at the in-law's when we have our own house to sleep in?
Well! We went to a neighborhood breakfast at 6 AM!
Why do you ask, would we get up so early to eat breakfast?
The answer is the PLANO HOT AIR BALLOON FESTIVAL!

We had a yummy breakfast with lots of family friends and then Josh and I made our way to the main event!

There was lots of clowning around at the festival...

These things are huge!!!!

We even walked inside of one!

This really nice man talked to us for a long time about how hot air balloons can fly and what makes them work. He even let us climb in the basket (tiny by the way) and pull the trigger for the flame.

We had a blast! Thanks for saving us a 45 minute drive and even more sleep deprivation Jerri and Bruce! This weekend is just getting better and better. Right now we are watching the BYU game!!! !Whoot Whoot! And in a little while we will be getting all cowboy'd up to meet Collins and Ashley for the Mesquite Rodeo. Yee-Haw!

Another post about...Sports!

Thats right! This time the sport of the post is..... BASEBALL! (which by the way I actually understand a wee bit) Can anyone believe that this little adventure was straight up MY idea?! Well it was! Josh and I invited Jerri and Bruce to partake in the festivities with us. We went to Rangers Stadium to see the Rangers play the Detroit Tigers. It was my first time in the Rangers Stadium, my first time to see the Rangers play AND my first time to see any major league baseball team play live. IT WAS A BIG NIGHT FOR ME!

This is the view from our seats!

A picture of my cute husband!

Bruce and Jerri in their fandom attire!

And now! I have to tell you my favorite part about sports is...THE FOOD!
We had peanuts...
hotdogs...

Ice cold lemonade in fancy take home Rangers logo cups.
(we also had... but do not have photo documentation of... a lemon chill and nachos!)

We had a blast! Thank you Bruce and Jerri for coming with us and sharing such a fun night!

P.S. I am thinking that if we are still in our house by Super Bowl time... we may have to have a party. Things are becoming very clear to me that the whole draw to sports is really the excuse they are to eat yummy food and hang out with friends and family. Which is something I can totally get into!

Dragon Fruit

The other day I was at the grocery store doing our weekly shopping and I saw this crazy looking pink thing in the produce section. Of course as the fruit lover that I am, I was curious. I had never seen or tasted such a strange looking thing in my life! So I bought it.

And after a google search I found out how to cut and eat a dragon fruit!

This is what I found when I cut into it... this fruit just gets curiouser and curiouser.
Well it tastes even more strange than it looks.
The flavor is similar to coconut and kiwi and pears and apples....
And the texture reminds me of pancakes
I must say, the dragon fruit made for a great adventure.

Molly Mormon!

I am becoming a bit of a house wife. Recently as you all know, I have taking up baking and cooking. My newest adventure is making GIANT CUPCAKES!

This was my first attempt, I made it for our friend Karisa's Birthday. It had a chocolate cake bottom, strawberry cake top and pink buttercream frosting.
